Chicken Fried Rice

A quick one-pan meal with balanced macros—perfect for post-workout recovery or meal prep.

Ingredients (Serves 1):

  • 100g boneless chicken breast, diced

  • 1/2 cup cooked brown rice (or white rice)

  • 1 whole egg

  • 1/4 cup mixed veggies (carrots, peas, capsicum)

  • 1 tbsp soy sauce (low sodium)

  • 1 tsp sesame or olive oil

  • Garlic and chili flakes to taste

  • Salt and pepper

Instructions:

  1. Heat oil in a pan. Cook chicken with garlic, salt, and pepper until fully done.

  2. Push chicken to the side, scramble the egg in the same pan.

  3. Add veggies, sauté for 2 mins, then add rice and soy sauce. Stir well.

  4. Cook for another 3–4 minutes on medium heat and serve hot.
